RICH CREAMY TOMATO SOUP

My go-to tomato soup is full of varieties. I’m a big fan of soup and love to celebrate its season. A big bowl of soup can fix my mood. I add a gallop of cream to make it taste incredibly different from my basic recipe. I love creamy yummy soup. Can you imagine how creamy this is? Soup? I’m sharing ingredients with you all, some of them are the main ingredients, and without them, I don’t know what it would be like.

INGREDIENTS:

  • Unsalted butter 2 tbsp.
  • Chicken for stock (as per your liking). I made chicken stock once and reserved it for later use.
  • Brown and white sugar ½ tbsp.
  • Salt and ground black pepper for seasoning.
  • Whipping cream to add the creamiest flavor and kick off the tangy flavor.
  • 1 medium-sized onion (chopped and sauteed)
  • 3 cloves fresh garlic (chopped roughly and saute)
  • 3 tbsp olive oil
  • ¼ tsp crushed red chili flakes (adjust it to your preference)
  • Fresh basil leaves (as per your liking)
  • ¼ cup orange juice (optional)
  • Grated parmesan cheese will melt into the hot soup. You can even crumble it to get more cheese in every sip.

Tip: you can add orange juice to get the desired color and strong flavor.

INSTRUCTIONS:

First, you have to roast tomatoes with olive oil. If you have cherry tomatoes, cut them into halves, and roasted them. Peel tomatoes, deseeded, and crush them. Take a large pan to melt unsalted butter. Now saute chopped onions and garlic. When its aroma fills in your kitchen, add crushed tomatoes.

Cook them until their juice dries. It’s the right time to add crushed red chili flakes, fresh basil leaves, black pepper, and salt. Cook them with a splash of water. The next step is for arm exercise, take an electric blender in your hands and blend it to turn it into a smooth paste. An electric blender is a one-time investment. Mix chicken broth and orange juice and cook it more.

PEEL TOMATOES OR NOT?

Well, no hard and fast rule to using peeled tomatoes. It depends upon the type of consistency you like. Smooth texture or chunkier. Which team are you on? I prefer to take off the tomato skin. However, little skin would never hurt. First, roast tomatoes and wait until they’re cool, then you pinch the peel safely. You can peel them before roasting but peel contains some flavor.

  • Sprinkle a lot of fresh basil leaves & herbs.
  • Sautee corn & mushrooms
  • Sour cream on top like a coffee lathe.
  • Grated cheese like tortellini and parmesan. You can crumble cheese.
  • Croutons roasted with butter.
  • Drizzle generous amounts of olive oil.
  • Crushed red flakes or red chili pepper.

TIPS FROM MY OWN EXPERIENCE:

  • Fresh tomatoes are juicier than canned tomatoes.
  • You can add heavy cream to get a more creamy flavor but don’t boil it.
  • If you’re out of fresh basil leaves or herbs. No worries, use dried basil leaves or herbs but don’t sprinkle them on top of the soup. It will ruin your soup.
  • Always roast or grilled tomatoes. Never boil them otherwise, they lose their goodness.

I believe soups are incomplete without broth. I mostly use chicken thigh pieces because it’s super juicy. Add chicken with traditional spices such as ginger, garlic, cinnamon, fennel, black pepper, cloves, cumin seeds, cardamom, and cardamom into a big pan of water. Let them cook on medium heat for a good 1 hour. All spices would blend to enhance the flavor. You can replace it with vegetable broth if you like to make your soup more vegan. Lastly, you can replace the homemade broth with a ready-made stock cube for instant results.

How to handle the fresh tomatoes’ tangy flavor?

This is very important, the taste of fresh tomatoes is unpredictable. It’s too difficult to handle, add the right quantity of both sugars, the white one and brown too. Neither less nor more, and wait for them to dissolve in soup. One more thing to balance its taste, we all scream for cream.
